He had a contract with the government to supply fresh meat to the troops at Fort Dearborn. he ordered the handlers to use canvas flappers instead of canes to drive stock. One of the most important changes is mechanization of the cleanup facilities, which has caused a considerable lightening of the atmosphere at the yards.

The company bought city street broom sweepers, tractor loaders, and other equipment. Other new developments include sections of metal pens, replacing the old wooden enclosures, and new weighing devices. Speedier Compost Method The cleanup drive led to the Frazer compost project, which is a joint venture of the yards company and the automobile manu-facturerC Joseph Frazer got into this unusual business because his son-in-law, Eric Eweson, a biochemist, developed a secret process of breaking down organic matter into a compost in about five days. This compares with about a year or more in natural decomposition of the refuse. Lately, Prince has startled old-timers at the yards by setting up a "city farm" in the area.

This is a cattle fattening project in which beer waste replaces some of the corn which is the main course on the country feed lots. Prince's idea is that the brewery by-product is turned out in the city and is, therefore, more economical to feed than corn which has to be shipped in. Altho approximately 983 million cattle, hogs, calves, sheep, lambs, and horses have gone thru the yards since it was opened Christmas day in 1865, this is probably the first farming operation. Merged Seven Early Yards Probably there wasn't much farming there even before 1865, for the area was a swamp just outside the city limits. This was the beginning of Oscar Mayer Co. The landlord took the place after Mayer built it up. He then went south two blocks to 1241 N. Sedgwick and, with his brother, the late Gottfried, built a small pork cutting and sausage plant. Mayer a Family Operation The Mayers, who lived over the factory, now operate one of the country's major meat products enterprises.

Besides the Chicago sausage plant, the company has a big packing house in Madison, and other properties in Prairie du Chien, Davenport, Philadelphia, and Los Angeles. It is a family operation. Oscar G. Mayer, son of Oscar FM is president and two brothers hold key posts. Two sons of Gottfried Mayer also have important positions.

Down at the stock yards another family proposition is causing the biggest commotion in decades. The stir has continued for about three years since William Wood Prince, adopted son and heir of the 92 year old financier, Frederick H. Prince, took over management of the yards. It shows no signs of abating. Young Prince's latest feat was getting the Republican and Democratic conventions for his International Amphitheater, known to millions of farmers and city folk as the site of the International Live Stock exhibition.

The Amphitheater, rebuilt several times, most recently after the great stock yards fire of 1934, is believed to have obtained its name from the grandstand of an old race track. Served In Pacific War Prince, 37, was plain William Wood before his cousin, Frederick persuaded him to add his present surname. He went to Groton and Princeton, served as an artillery captain in the Pacific, and returned from the war to the First National bank, which he had first joined in 1936. Frederick H. Prince lives at Newport, R.

and goes to Eiar-ritz, France, for two or three months twice a year. He is one of the wealthiest men in the country. He was underwriting and selling 5210-30 S. WABASH-AV. pressed, NOT when they are most popular.

Well-informed investors who recognize the advantage of picking stocks when they are sub stantially' below their 5-year market to go by prairie schooner from Independence, he found that selling was a better business than prospecting. He built sluiceways for the miners and saved several thousand dollars. He then returned to New York, found that the girl back home hadn't waited, and decided to go to Milwaukee. There he got into the produce commission business, prospered for four years, and was invited into the Plankinton packing firm in 1863. Four years later the firm established a Chicago subsidiary known as Armour Co.

The first Armour hog plant was the old Bell house in the Archer av. packing center which had been built up during the Civil war. About 1868 packers began to move south to the area just west of the stock yards and Armour followed in 1872. Animal Utilization Intensified The Chicago operation eventually separated from the Milwaukee company and expanded greatly in the refrigerated beef boom. In the 1880s P.

D. Armour organized his plants to utilize as much as possible of the animals they slaughtered, if only for soap grease and fertilizer. Recently the science of animal utilization has reached its highest point at Armour which now is headed by Frederick W. Specht. Two Armours, A.

Watson and Laurance, are directors. The company views its laboratory accomplishments primarily from a humanitarian, rather than a money making angle. The outstanding achievement was development of the pituitary hormone, ACTH, which was ordered into production in the early summer of 1949. It has been used in treating arthritis and 20 other diseases. A later development is trypsin, which has the ability to turn dead flesh into liquid without damaging live tissue.

Trypsin, like the insulin used by diabetics, comes from a meat animal's pancreas. Wilson Title Relatively New Animal glands have to be preserved quickly to make them valuable sources of hormone drugs. Hormones are not the only medical products of meat packing. Liver extracts are used in treating anemia, many products are made from animal blood, and a stomach lining substance is used for ulcer. The Swift and Armour companies got their names long ago.

Wilson Co. has had its corporate title for only 35 years, which is not very long in Chicago meat packing history. It has two links with old Chicago, however, in the story of its founder and present chairman of the board, Thomas E. Wilson, and the history of the company which he took over. Thomas E.

Wilson went to work in the packing industry in 18S7 as a car checker in the stock yards for the old Morris company. In 26 years he became president of Morris. Outside, Packing-town looks as if it doesn't like to spend money just for appearance, which it doesn't. If any individual was responsible for the industry's economical ways, it was G. F.

Swift, a man who believed that "you don't make money; you save it." This was one of his favorite sayings. He made a habit of checking the waste outlet of the Chicago plant daily for evidence of extravagant operations. He also expressed his dislike of unnecessary work around the place by telling one supervisor to fire any mechanic he saw working on the property. Started as Butcher Helper Swift now managed by President John Holmes the board chairman is Harold H. vv i youngest and only surviving son of the founder, has an extensive collection of G.

F. Swift's sayings. Forty-eight years after his death, they still influence the company. Economy wasn't his only subject. He also said he could raise better men than he could hire, and the company does just that.

A native of Massachusetts, the elder Swift began working as a butcher's helper in 1853 at the age of 14. Two years later a famous heifer deal put him in business for himself. His father advanced $20 for the venture. He bought the heifer for 19, slaughtered it in a shed, and sold the beef to neighbors for Swift borrowed $400 to go into hog and cattle buying and opened a meat market a few years later. He moved to Chicago in 1875 as cattle buyer for Hathaway Swift, a Boston partnership.

This firm was dissolved in 1S77 because James A. Hathaway did not wish to get into Chicago meat packing. Dressed Meat Cuts Frate Swift's idea was to ship western dressed beef, instead of live cattle, to the east and save on frate costs and feed. He took his from the partnership and began slaughtering for winter shipment in a large wooden shed which he purchased at the site of the present Swift lard refinery. The shipments were made successfully and he went on to the next part of his plan, which was to ship in all seasons with refrigerator cars.

The other packers jeered at the idea and the major railroads were unwilling to promote a reduction in frate volume. The Grand Trunk railway cooperated.
